Tender Jowar (Sorghum) is called Hurda in Marathi and Ponk in Gujarati. These crops grows in most of the regions in Maharashtra. Generally it grows during the months of November to May.
Hurda is high in fibre and provides much needed nutrition. Lot of skill is required to trash Jowar in a way that it retains moisture and does not become too dry. All this hard work result in a delicious heap of Hurda. Hurda stalks are roasted/ barbecued in hot coal ashes and then roasted tenderlyon coal in mud pits which gives it an earthy taste. The freshly roasted Hurda is then served along with various types of chutneys made of Sesame seeds, Groundnuts, dry Coconuts, Garlic and Red Chillies. Additives like Jaggery, and Rewdi, kharda’ an extremely spicy pickle made of green chillies, Lime and Shev make the flavour all the more spell bound
